Ohio Nachos with Blue Alfredo

One of the first foods I tried after moving to Columbus, Ohio, was "Ohio Nachos."  Unlike typical nachos, the Ohio version uses potato chips and a creamy blue cheese sauce. My version includes colorful vegetable chips and smoked blue cheese. Crunchy, smokey and bright, this dish is a unique, easy, scrumptious, happy hour snack. 


Vegetable chips
8 oz. of your favorite Alfredo sauce
6 oz. smoked blue cheese (creamy is best), divided
2 T. Fresh Parsley
Pinch of nutmeg


Preheat the oven to 350.  Place the chips on a cookie sheet, place in the oven and warm briefly.
Add 4 oz. of the blue cheese to the Alfredo sauce.  Stir to combine.   Warm the sauce over low heat on the stove or in increments of 30 seconds in the microwave until the sauce is bubbly and the blue cheese has been incorporated.  Add the parsley and nutmeg.  (The nutmeg helps cut the richness).


Plate up your chips and carefully pour the blue alfredo on top.  Sprinkle with the remaining blue cheese.

Savory Nuts



The next time you’re feeling peckish, give these savory nuts a crack.  This recipe takes a plain, ordinary handful of nuts to a trendy new level.  Light, flavorful and healthy, they are a flawless snack any time of the day.  For a more complete nosh, pair them with dried fruit, cheese and a sparkling aperitif for an impressive, delicious course.  


Savory Nuts

1 egg white
1 t. Smoked paprika
1/8 t. Cayenne Pepper
1/4 t. onion powder
¼ t. chili powder
½ t. garlic
Salt
Dash of Pepper
2-3 C. Mixed Nuts

Preheat oven to 350. 

In a medium bowl, beat the egg white until stiff peaks form.  Gently fold in the spices and combine well.  Fold in the nuts and make sure they are evenly coated.  Spread the nuts onto a lined baking sheet and bake for 30 minutes, or until the coating has hardened and browned lightly.   

*TIP:  This method of using an egg white is also how you would make the cinnamon-sugar pecans you find around the holidays.  Experiment with your own special blend of spices to make it personal.

7 Game Day Favorites

I’ve said it before and I’ll say it again.  Football’s not really my thing.  BUT, planning the food for a party based around football?  That I can do.  I’ve collected some of my choice finger foods from the past year or so and compiled them here for an easy guide to game day favorites.  Make one of them or all of them and your party is sure to be a touchdown, no matter who wins the game!

Potato-wrapped meatballs from Holland

Chili is a must.  I had it growing up.  I made it for my Super Bowl parties in college.  It's so easy to have a big pot of chili on the stove.  People can help themselves, it's very casual and it's perfect for a cold, February day.

Pretzel Dogs

Head back to childhood with these fun, crunchy, chewy and satisfying pretzel-wrapped hot dogs.  


1 tube of pretzel or breadstick dough (found in the refrigerated section near the cinnamon rolls)
Your favorite kind of precooked hot dogs or polish sausage (I like Nathan's or Hebrew National)
Course Salt
Ketchup & Mustard

Preheat the oven to 350.  Spray a cookie sheet with nonstick spray. 

Open the pretzel dough and separate the pieces.  Take one strip of pretzel dough and slowly twirl it around one of the hot dogs.  You may need to stretch it a little bit to reach the end of the hot dog.  Place on the cookie sheet.  Repeat the process with each of the other hot dogs. 

Some of the pretzel dough directions say to brush the tops with egg wash or water.  I find that it’s not necessary, but feel free if you have some egg handy. 

Sprinkle each hot dog with course salt for looks and make sure it sticks to the dough.  Bake for 10-12 minutes or until golden brown.  Serve with ketchup, mustard or your favorite condiments.
